Stir-fried Duck
Ingredients:
Ginger slices
Garlic
Sichuan peppercorns (green peppercorns preferred, if unavailable use red peppercorns )
small spicy red chilies
greens (such as celery, cilantro, garlic sprouts, etc.)
Seasonings:
2-3 tablespoons light soy sauce
1 tablespoon dark soy sauce
1 tablespoon spicy bean paste
half tablespoon sugar
Steps:
1. Cut the duck meat into small pieces.
2. Heat oil and add ginger slices, garlic, Sichuan peppercorns, and small red chilies
3. Add the duck pieces and stir-fry over high heat until the duck fat oil is rendered
4. Add the seasonings (light soy sauce, dark soy sauce, spicy bean paste, etc.) and continue to stir-fry.
5. Add celery, garlic sprouts, or scallions.
