Prepare the eggplant:
Cut into chunks or strips
Marinate with salt for 10 minutes
Rinse thoroughly with water and squeeze out as much water as possible
Sprinkle with a layer of starch
Seasonings:
(Braised Eggplant Sauce)
Dark Soy Sauce: 0.5 teaspoon
Soy Sauce: 1 teaspoon
Dark Vinegar: 0.5 teaspoon
Sugar: 0.5 teaspoon
Starch: 0.5 teaspoon
Water: a little (add to half bowl)
spicy bean paste is recommend to put 0.5~1 teaspoon
*Braised the Eggplant until it is very soft (must taste before to serve)
